Five years ago, he decided to take charge of the coffee production of the 14 hectares family&#8217;s farm.<\/p>\n<p>Since then they have turned production around, focusing on creating micro-lots and improving processes. This is due, in part, to the general interest throughout the world for quality coffees that are respectful of the environment and that allow coffee growers a dignified life; the basic principles of specialty coffee.<\/p>\n<p>Nestor and Adrian have joined forces with another young neighbour, Jhoan Vergara, from the Las Flores farm, to help each other grow and process better coffees.<\/p>\n<p>El Diviso farm is located near the municipality of Pitalito, south-west of Colombia, in the Huila coffee region. It is at an altitude of between 1,750 and 1,800 metres and has ideal conditions for growing specialty coffees.<\/p>\n<p>Nestor and Adrian are the third generation of coffee farmers and the first to have turned production around to focus on quality rather than quantity. But this passion could not have found a channel if Nestor had not seen the possibility of a decent life in it. As he says:<\/p>\n<p>\u201cIn general, being a coffee producer is poorly paid and it is not very attractive. The only thing that allows producers not to starve is to eat the fruits and vegetables produced on the farm. In terms of material goods, we only have access to what is strictly necessary. Many young people therefore prefer to go to town to find an office job or a less physically demanding job because they think that the coffee is not worth it\u201d.<\/p>\n<p>Nestor found a way change this dynamic because his passion for coffee led him to strive to improve and try new ways:<\/p>\n<p>\u201cI have always had a passion for production. When I realised that specialty coffee offered a real possibility of economic development, and that in addition I could develop my knowledge of coffee production, and in particular the processes, I really got into it.\u201d<\/p>\n<p>Nestor and his brother Adrian benefited from a national program subsidised by the Colombian government to learn theoretical knowledge about growing and processing specialty coffee. After arduous research based on trial and error, both in the cultivation and processing processes, they have achieved coffees that win competitions around the world and are sought after by roasters.<\/p>\n<p>The batch that we bring to you is of the Sidra variety, a hybrid of Bourbon and Typica that seeks to combine the best of both. This lot has grown in the shade of native and fruit trees, which favours slower ripening.<\/p>\n<p>The process applied is a variant of the Honey process adding fermentation times to highlight its qualities.<\/p>\n<p>First, only the ripe cherries are collected and left to &#8220;oxidise&#8221; for 12 hours at a temperature of 25 degrees. That is, they are left to rest so that a natural fermentation begins.<\/p>\n<p>The second step is an anaerobic fermentation in plastic bags at 16-18 degrees for 60 hours. A esta altura las condiciones clim\u00e1ticas son ideales para una maduraci\u00f3n lenta.<\/p><p>Adolfo Umana, due\u00f1o de la peque\u00f1a granja Alto la Estrella, planta los cafetos de geisha entre \u00e1rboles de aguacate. Esto favorece la creaci\u00f3n de un microclima espec\u00edfico muy propicio para cultivar la variedad geisha.<\/p><p>Adolfo trabaja la tierra de forma org\u00e1nica y respetando el ecosistema local. Con el tiempo, su pasi\u00f3n por el caf\u00e9 le ha llevado a convertirse en Q grader y fundar y gestionar su propia estaci\u00f3n de lavado.<\/p><p>Ivan y su familia trabajan con los caficultores de la zona para ayudarles a cultivar los mejores caf\u00e9s y procesarlos de la forma m\u00e1s adecuada. El conocimiento y la pasi\u00f3n por el caf\u00e9 de Ivan y su familia hacen que cada lote que sale de su estaci\u00f3n de lavado sea un caf\u00e9 especial.<\/p><p>Ivan ha desarrollado su propio estilo de procesado llamado \u2018red honey\u2019, que se ha convertido en la se\u00f1a de identidad de su estaci\u00f3n de lavado. Este consiste en fermentar siempre las cerezas de caf\u00e9 brevemente antes de despulparlas, luego las dejan secar con el muc\u00edlago. Ivan dice que este caf\u00e9 tiene un excelente muc\u00edlago debido a la variedad y las condiciones de cultivo y altitud, que favorecen una maduraci\u00f3n lenta.<\/p><p>Una vez despulpado y con el muc\u00edlago, las semillas se ponen a secar en camas elevadas.
